CHRISTMAS COOKIES
Ingredients:
125 g of butter
60 g of Brown sugar
60 g de White sugar
2 eggs
120 g of honey
400g of wheat flour
1 tablespoon of cinnamon
1 tablespoon of vanilla sugar
2 teasponns of ground ginger
1/4 of nutmeg
Half a teaspoon of salt
Preparation:
We mix the eggs and the sugar, adding the cinnamon, the ginger and the nutmeg little by Little. We don’t need the cookies to rise so we won’t add yeast. However if you want them to be fluffy you can add a couple of spoonfuls.
We add the butter at room temperature (it must be creamy) and we mix it all together.
We add the honey and the salt at the same time.
Finally we sprinkle the flour, sifting it with the help of a sieve, so there are no lumps and the mixture is soft.
Once all the ingredients are mixed, we stir everything until we have a manageable paste. We sprinkle a little bit of flour on the countertop and we keep stirring until it’s done. We let the mixture rest for some minutes and we sprinkle the countertop with flour again.
With the help of a rolling pin, we stretch the paste without making it too thin, because as the cookies don’t have yeast, they will not rise and we want them a little fat so they don’t break.
When the mixture is done, either with a knife or with cookie cutters, we give the shape that we want and we put them on the oven, on top of a tray previously prepared with baking paper, at 180º degrees for about ten minutes ( if you want them more done, leave them there until you see a golden color).
When you remove them of the oven you must wait until they are cold to start decorating them with the frosting.
For the frosting we will need 200g of sugar and an egg white, if the mixture is too runny, you add more sugar.
You can give it color with food dyes that you can find in any supermarket.
Lastly you can decorate them as you like and … Enjoy!
